Sloppy Joe Turkey Style
Serves 4
1 teaspoon olive oil
1 small yellow onion, diced
2 gloves of garlic
1 pound of lean ground turkey meat (94-99% lean)
½ cup low salt ketchup
1 teaspoon yellow mustard
½ tablespoon red wine vinegar
½ tablespoon brown sugar
4 Whole Grain hamburger buns (or Gluten Free)
Optional: 2 cups shredded cabbage, 1 large orange or yellow bell pepper sliced, or ½ cup shredded low fat mozzarella cheese.
- In a medium size skillet, heat the olive oil over medium heat.
- Add in the garlic and diced onion. Cook for about 5 minutes until the onion is translucent, stirring constantly.
- Add the ground turkey to the pan. Break up the meat, mixing in the garlic/onion mixture as you stir.
- Once the turkey is cooked and no longer pink, add in the ketchup, mustard, and vinegar. Sprinkle the brown sugar on top. Mix well.
- Reduce the heat and simmer on low for 10 minutes, stirring intermittently. If it starts to dry or be thick, mix in a tablespoon of water.
- Divide the meat mixture into 4. Put one serving on each hamburger bun.
- Add on slices of peppers, shredded cabbage, or low salt/low fat shredded cheese if desired. Serve warm.
