Flourless & Butter Free Peanut Butter Oatmeal Chocolate Chip Cookies
Makes 20 cookies
1 cup creamy peanut butter
1/3 cup coconut sugar
1 ½ tsp vanilla extract
2 large eggs
2/3 cup rolled oats (or GF oats)
1 tsp baking soda
1/3-2/3 cup dark chocolate chips
- Preheat oven to 350 degrees.
- In a small bowl, mix together the oats and baking soda. Set aside.
- In a large bowl, add the PB, sugar, eggs, vanilla. Beat with an electric beater until smooth.
- Mix in the dry ingredients to the wet ones (except the choc chips). Stir well.
- Gently mix in the chocolate chips.
- Roll mix into 2-inch balls and place on a cookie sheet sprayed with nonstick spray (or use parchment paper). Just slightly flatten the tops of each cookie. (If the batter is too sticky add some flour to your hands to work with it easier)
- Bake 9-11 minutes. Remove from oven when edges are golden brown. They will harden slightly as they cool.
