BBQ MEATBALLS

1.5 lbs. lean ground chicken or turkey

1/2 cup oat flour (or grind oatmeal in a high powder chopper/blender to use)

1/2 cup finely diced onions

1/4 cup part-skim (low fat) shredded mozzarella cheese

1 Tbs. minced chives

Dash black pepper

1 cup BBQ Sauce (use a no salt or low salt brand if you follow a low sodium diet: such as Primal Kitchen Classic unsweetened BBQ sauce that can be found at most grocery stores).

1. Mix the ground meat, oat flour, onions, mozzarella, chives, and pepper in a mixing bowl. Using a small cookie scoop or spoon to form into meatballs.

2. Spray a skillet with cooking spray and heat over low-medium heat. Place meatballs in the pan. Cover and cook, roating the meatballs every few mintues until all sides are browned. Add the BBQ sauce to the pan. Toss the meatballs in the sauce until well coated. Remove from heat once cooked through and serve warm.
