French Toast

Dairy and Gluten free alternatives

Adapted from The Ambitious Kitchen

Serves 3


3 eggs

1 cup milk (use almond or oat milk as dairy free options)

½ tsp vanilla extract

¼ tsp almond extract

½ Tbsp ground cinnamon (not cinnamon sugar)

1 tsp orange zest (optional)

6 slices thick bread (use sprouted whole grain bread for a healthy option or gluten free)

Nonstick pan spray or olive oil

Optional toppings:  chopped nuts, diced strawberries, blueberries, sliced bananas

To add protein: top with a low sodium nut butter or Greek yogurt

For sweetness: add a drizzle of pure maple syrup on top


  • Whisk eggs together. Add in milk, extracts, and cinnamon. Stir well to combine.
  • Coat a skillet with nonstick spray, olive oil, or butter substitute and heat over medium heat.
  • Dunk each bread slice into the egg mixture coating each side (do not leave in mixture too long or it will be too soggy to pick up and the bread will rip)
  • Place coated bread slices in the heated skillet. Cook until golden brown on both sides.
  • Serve warm with your choice of optional toppings.
