Homemade Guacamole

Serves 4

2 ripe avocados

Juice from ½ lime

½ cup grape tomatoes, diced

¼ cup white onion, diced

¼ cup cilantro, diced or 1/8 cup dried 

Ground pepper to taste 

Optional: 1 jalapeno finely diced 

  1. Mash avocado in a glass bowl.
  2. Add in lime juice, tomatoes, onion, cilantro, pepper, and jalapeno if using. 
  3. Stir well.
  4. Serve with low salt Blue Corn baked tortilla chips.
