Honey Garlic Glazed Salmon
Easy & Quick ~ Serves 4
1 lb salmon
2 Tbsp olive oil
½ tsp minced garlic
2 Tbsp honey
1 dash black pepper
1 Tbsp lemon juice
1 dash dried or fresh parsley
4 sweet potatoes
4 cups broccoli
- Preheat oven to 400 degrees. Wash and cube the sweet potatoes then place in a single layer on a nonstick baking sheet. Spray the top of the potatoes with nonstick cook spray. Bake for 15 minutes. Add the broccoli to the pan. Spray the top of the broccoli with cooking spray. Roast for approximately 10 minutes more (remove just as color starts to darken).
- While the vegetables are roasting, add the oil to a large skillet over medium heat. Once hot, add the salmon to the skillet (skin side down). Sprinkle the salmon with pepper. Cover and cook for approximately 10 minutes until the salmon is fully cooked and begins to flake.
- While the fish is cooking, whisk the honey, lemon juice, and garlic together in a small bowl. Pour the mixture over the fish during the last few minutes of cooking.
- Divide the vegetables and fish into 4 servings and serve hot. Sprinkle with extra pepper or salt-free seasonings if desired. Enjoy!
