Italian Chicken and Veggie Grill Packets
Heavy duty aluminum foil
2 boneless, skinless chicken breasts
½ fresh lemon
1 cup fresh zucchini or yellow squash chopped
1 cup diced baking potato (scrubbed, keep skin on)
½ cup diced onion (use your favorite…red, yellow, or sweet)
½ cup diced carrots
½ cup diced celery
½ cup sliced mushrooms (optional)
½ cup diced peppers (any color)
¼ teaspoon garlic (fresh, dried, or powder)
½ teaspoon Italian seasoning (with no salt) or oregano
Preheat Grill or Oven to 350 F.
Spray two 12” sheets of aluminum foil with cooking spray.
Place one chicken breast in the center of each foil.
Squeeze lemon juice equally onto each chicken breast.
In a large mixing bowl, combine the potato, assorted vegetables and garlic. Stir to combine.
Top and surround each chicken breast with half the vegetable mixture equally.
Sprinkle seasonings on top.
For each foil, fold up its sides together then the ends together to form a tight sealed packet for each chicken/vegetable mixture.
Place the packets on the grill (place on the side of the flame and rotate the packet half way through) or in the oven (place packet on a baking sheet for stability). Bake 40 minutes or until the chicken is cooked through and the vegetables are tender.
