Meatless Monday Lentil Burgers 

Serves 4 

Adapted from Eat Happy by Anna Vocino 

1 cup green lentils

4 cups water

1 small sweet onion, diced

1 cup flour or almond flour

2 eggs, lightly beaten, divided 

2 Tbsp chopped chives, fresh or dried

2 Tbsp olive oil 

4 oversized lettuce leaves 

  1. Boil the lentils in the water. Reduce heat and simmer for 30 minutes. Drain, set aside. 
  2. In a mixer, add half the lentils, onion, half the flour, one beaten egg, and chives. Mix until it is paste consistency.  Put this mixture into a large mixing bowl. Add in the remaining lentils, flour and second egg. Mix well. 
  3. Heat olive oil in a skillet. Shape the lentil mixture into patties and gently place in heated pan (carefully or they will fall apart!). 
  4. Cook until crispy and brown about 3-5 min each side. 
  5. Serve over the lettuce leaf.  Garnish with your favorite burger toppings.
