Sloppy Joe Turkey Style

Serves 4

1 teaspoon olive oil

1 small yellow onion, diced

2 gloves of garlic

1 pound of lean ground turkey meat (94-99% lean)

½ cup low salt ketchup

1 teaspoon yellow mustard

½ tablespoon red wine vinegar

½ tablespoon brown sugar

4 Whole Grain hamburger buns (or Gluten Free)

Optional: 2 cups shredded cabbage, 1 large orange or yellow bell pepper sliced, or ½ cup shredded low fat mozzarella cheese.

  1. In a medium size skillet, heat the olive oil over medium heat.
  2. Add in the garlic and diced onion. Cook for about 5 minutes until the onion is translucent, stirring constantly.

  4. Once the turkey is cooked and no longer pink, add in the ketchup, mustard, and vinegar. Sprinkle the brown sugar on top. Mix well.
  5. Reduce the heat and simmer on low for 10 minutes, stirring intermittently.  If it starts to dry or be thick, mix in a tablespoon of water.
  6. Divide the meat mixture into 4. Put one serving on each hamburger bun.
  7. Add on slices of peppers, shredded cabbage, or low salt/low fat shredded cheese if desired. Serve warm.
