Spinach Pear Salad with Vinaigrette

(with protein packed option)

Great winter or summer salad option that can be served as a side dish or as the main meal. 

This version serves 4 for a smaller salad per person. Double the recipe as needed. 

Salad: 

1 cup red grapes, sliced in half 

½ cup walnuts

2 pears, cored and sliced

4 cups baby salad spinach (or use your favorite greens)  

½ cup reduced fat feta cheese

Dressing:

½ cup olive oil

¼ cup balsamic vinegar (not vinaigrette) 

1 tsp honey

1 tsp lemon juice 

1 tsp Dijon mustard (optional) 

1 tsp garlic powder

1 tsp onion powder 

Optional Protein Boost: 2 chicken breasts, cooked and sliced or cubed (or buy a rotisserie chicken already cooked, peel off the skin, and use the white breast meat). 

  1. Cook chicken breasts if using. 
  2. Place all the dressing ingredients together into a tight sealed jar, shake to mix well. You may still need to whisk it until it is well combined. 
  3. In a large bowl, combine all the salad ingredients. Gently stir to combine.  
  4. Divide the salad among 4 bowls. 
  5. Add the grilled chicken to the top if using.  (Can serve the chicken warmed or room temp). 
  6. Drizzle each salad portion with the desired amount of dressing.
