1/3 cup uncooked brown rice (1 cup cooked)
1 cup raw cauliflower rice
1 cup broccoli florets
½ cup carrots , diced
1 cup snap peas, whole
½ small yellow onion, diced
1⁄2 Tbs. minced garlic
1⁄4 cup unsalted cashews
1⁄8 cup coconut aminos (WARNING: this is a higher salt item!)
2 Tbs. raw honey
Pepper, to taste
Directions:
1. Cook the brown rice according to package directions.
2. Cook the cauliflower rice according to package directions.
3. Combine the two rice’s in a mixing bowl and set aside.
4. In a small bowl, mix the coconut aminos, garlic and honey together.
5. Spray a nonstick skillet with nonstick cook spray.
6. Over medium heat, add the onion and cook until the onion is translucent.
7. Add the carrots and snap peas. Stir well. Once they soften, add the broccoli.
8. Cook the vegetables to your desired texture then add the honey mixture onto the vegetables then stir well to coat. Remove from the heat.
9. Divide the rice mixture between two bowls. Add half the vegetable mixture on top of each rice bowl. Add half the nuts to each bowl. Sprinkle with pepper if desired.
