An easy, balanced To-Go snack
1 serving: 230 calories. 8 grams Fat/ 21grams Carb / 20grams Protein (this will mostly
depend on the type of cheese used, some brands will have more content than others)
1/2 cucumber, sliced into four long strips
1 reduced fat mozzarella string cheese stick, sliced into long strips
2 oz. nitrate-free, low sodium deli turkey
1 Tbs. yellow or Honey mustard
1/2 cup fresh spinach leaves
Dash black pepper
1/2 cup fresh berries
1. Lay the deli turkey out flat to create four “roll-ups.” Gently spread the mustard on the turkey. Divide the spinach, cucumbers, and cheese evenly between the turkey slices.
Sprinkle with pepper. Starting at the edge, roll the cheese and veggies together tightly inside the deli turkey.
2. Enjoy berries on the side.
